Sweet Dreams Bedding




Two of my dear friends and I have started a custom baby bedding and accessories business. We are starting our business with blankets and burp cloths, but will be expanding our business in the next few weeks with baby bedding. Gluten Free Cinnamon Coffee Cake


Batter:

  • 3 cups Trader Joe's Gluten Free Pancake & Waffle Mix
  • 2 Eggs
  • 3/4 cup water or milk
  • 1/4 cup oil
  • 1/3 cup sugar

Mix together thoroughly and place in a sprayed or greased 8X8 pan.

Cinnamon Crumble topping:

  • Remainder of Trader Joe's Gluten Free Pancake & Waffle Mix
  • 1/3 - 1/2 cup brown sugar (to taste)
  • 1/4 cup gluten free oats
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 6 tbs. melted butter or oil
  • 1/4 cup chopped nuts (optional)

Combine above ingredients until crumbly.

Crumble topping evenly over coffee cake batter. If you like, you can drag a knife through the batter to swirl some of the topping through the coffee cake.

Bake at 350 degrees for 40-45 minutes or until toothpick inserted comes out clean.

Create your own scrumptious variation by adding in a handful or chopped apples, dried fruit or chocolate chips to the coffee cake batter!

Stepping Stone Spring Tea 2010 - *Canceled for 2010


I will be participating in the 2010 Spring Tea benefiting the organization called Stepping Stones for Women. Last year my "theme" was turquoise, red, and cherries. This year I'm thinking, Pink, Black, White, Vintage Paris. I found these pictures today to give me more ideas... I'll post pictures of my table after the tea on May 15th.


I bought this jewelry stand on ebay and it is 21" high. I am going to decorate it with flowers, ribbon and jewelry to dress it up. I hope it makes a nice centerpiece:)

Recipe: Spinach and Strawberry Salad


Serves 4

This baby spinach salad is dressed in a homemade raspberry vinaigrette and tossed with fresh strawberries, almonds and creamy goat cheese. What could be more easy and delightful?

Ingredients

1/2 shallot, finely chopped
2 tablespoons raspberry vinegar
2 tablespoons extra virgin olive oil
1/2 pound baby spinach
1 cup strawberries, thinly sliced
1/3 cup sliced almonds, toasted
2 ounces fresh goat cheese, crumbled ( I used Feta)

Method

In a large bowl, whisk together shallot and vinegar. While whisking constantly, drizzle in oil to make a vinaigrette. Add spinach, strawberries, almonds and goat cheese and gently toss to combine. Serve immediately.

Nutrition

Per serving (about 4oz/122g-wt.): 180 calories (120 from fat), 13g total fat, 3.5g saturated fat, 5mg cholesterol, 140mg sodium, 11g total carbohydrate (4g dietary fiber, 2g sugar), 6g protein

Spring

I love everything about Spring. I love the way it smells after a long night of rain. I love the way the rain sounds in the middle of the night and how a cup of coffee and rain seem to be the perfect match. I love watching the trees and flowers blossom. I love being able to wear shorts during the day and still bundling up at night with a cozy sweater and blanket. I love watching Mattias play outside with snails and lizards. He is such a boy. I love going to the Farmer's markets in town. I love sitting in a chair with the sun shine warming my face. I love the 13 new babies that have been born to our friends and family over the last two months. I love Easter and the reminder of what Jesus did for all of us because He loves us so much. I look forward to swimming, bbq's, picnics at the park, trips to Sweden, hearing Mattias speaking new words, anticipating and waiting for God's timing for our next baby. I really love Spring:)
